A Veggie What?

That’s right folks as of last weekend I became a vegetarian. Not by choice, oh believe me. Mr. S is having to make the switch as well in order to sync our shopping and budgets. Here’s the deal… I’m not lactose intolerant but I guess some form of meat intolerant. I haven’t seen a doctor yet, I’m still waiting on that process, so it’s really my own diagnosis but ever since making the switch I’ve been golden and well.
Some might think making this switch would be easy especially if it was helping your overall health and well being, but not me. I HATE almost all vegetables. I’m such a picky eater and would prefer to be sick and upset all of the time, then to eat vegetables. I’m very picky on my fruits as well which I’m sure you can surmise is making this awfully difficult! I can eat eggs, they don’t bother me, and that’s where I’m getting the bulk of my protein (that and energy shakes) and I’m eating lots of salads. Costco’s Broccoli Slaw Salad is a fave. Breakfasts are typically bagels and cream cheese with yogurt and I’m slowly incorporating more and more fruits into my diet. I’ve had a banana everyday this week and an apple or applesauce here and there.
Here’s the biggest downer…. I LOVE meat! I’m all about the big medium rare steaks, and chicken is like a staple in our home. Therefore Mr. S and I have cheated a little here and there, but for the most part we are welcoming this new change as a challenge to overcome.
If any of you out there have “meat free” recipes, I’m looking for a hook-up.

Hey I can't eat the regular meat meatballs because of an allergy to anise but Costco has some veggie & cheese 'meatballs' and they are actually really good and high in protein. When I grill them up in a pan and throw them on spaghetti with sauce I could not tell they were meatless. You might want to give em a try!

Way to go, and Good luck. email me and I'll send you a bunch of great veggie recipes that you WON'T be sorry for eating...absolutely delicious and full of flavor.

Also, something I read somewhere, and not sure the validity...but if you eat a food 17 times (I think that's the number) you'll learn to like it. I'm a vegan and I don't love a lot of veggies either (and beans too)...it's definitely an acquired taste and takes learning for sure.

I am also like you and LOVE meat, but since we're Vegan for health reasons, we figure it's ok to give ourselves breaks when we feel like it because we eat healthy all the other times. It gives it a great balance. Don't worry about being 100%. ESPECIALLY right at the beginning, if it helps, because breaking into it gradually really helped J and me.

Well, this might be a little weird to leave this recipe on here- and you can add meat to this however it doesn't make it really different without the meat. This is SO easy to make and it covers up a lot of "veggie" tastes still tastes SO yummy! Add some French bread with it and it's golden :)

Tortellini Soup

1 onion, chopped
2 cloves garlic, minced
1 cup water
2 (13.75-ounce) cans beef broth
½ cup white wine or apple juice
3 carrots, sliced
1 (28-ounce) can crushed tomatoes
1 teaspoon basil
1 teaspoon oregano
1 cup sliced zucchini (optional)
4 tablespoons parsley, chopped
1 green pepper, chopped
8 ounces cheese tortellini (refrigerated or frozen)

fresh grated Parmesan cheese

In large soup pan, saute chopped onion and garlic and cook until tender.put into crock pot.. Add water, broth, wine, carrots, tomatoes, basil, oregano, zucchini, parsley and green pepper. Simmer for 30 minutes or longer. Add tortellini 5 to 10 minutes before serving and cook until tender, but not soggy. Garnish each serving with Parmesan cheese.
